Almost Vegan Pumpkin Chocolate Protein Brownies
Pumpkin flavored everything season is alive and thriving! I finally got my hands on PEScience vegan chocolate bliss protein powder over the weekend so I did some baking experimenting Sunday afternoon. I made black bean based protein brownies in the past (recipe here) using egg white based protein powder which are really good but did a little revamping with this batch. Below is what you'll need:

Ingredients:
3/4 cup oat flour
2 scoops chocolate protein
1 egg 2 whites
125g pumpkin
2-3 tbsp dark chocolate chips
1/2 cup unsweetened almond milk
Stevia to taste (I added two packets)
1 tbsp coconut oil
1 tbsp baking powder
Directions:
Preheat oven 350F
Mixed all ingredients and save 1 tbsp chocolate chips
Spray 8-10 inch pan with cooking spray (I used coconut oil spray)
Spread mix evenly in pan
Top mix with chocolate chips
Bake for about 25 mins
Let cool and then enjoy!
Tastes just as good after refridgeration :)
